The Mushroom Powder Process
Drying: The first step is drying the mushrooms thoroughly. You can use several methods:
- Oven drying: Arrange cleaned and sliced mushrooms on a baking sheet lined with parchment paper. Bake at low heat (around 150°F) with the door slightly ajar for several hours, turning occasionally, until completely dry and brittle.
- Dehydrator: Use a dehydrator following the manufacturer’s instructions for drying mushrooms. This often takes less time than the oven method.
- Sun drying: If you live in a hot, dry climate with no insects, you can sun-dry the mushrooms on a screen in direct sunlight, covered with cheesecloth for protection.
When fully dry, the mushrooms should be brittle and snap or break apart easily. If they bend instead of breaking, it’s best to keep drying them. If you store mushrooms that still contain moisture, they may rot or go mouldy.
How to Use Mushroom Powder
- Boost flavor: Sprinkle mushroom powder into soups, stews, sauces, gravies, pasta dishes, dips, and marinades for an instant umami kick.
- Seasoning: Use it as a seasoning for roasted vegetables, meat, tofu, or popcorn.
- Savory snacks: Add the powder to popcorn kernels before popping, sprinkle it on roasted chickpeas, or mix it into homemade tortilla chips.
- Baked goods: Experiment with it in savory breads, crackers, or pizza dough for a subtle mushroomy depth.
- Coffee substitute: Some mushroom powders, like Lion’s Mane, are used as coffee alternatives for their potential health benefits.
Once completely dry, grind the mushrooms in a coffee grinder, spice grinder, or food processor until a fine powder forms. Sift the powder to remove any larger pieces for a smoother texture.
Store the mushroom powder in an airtight container in a cool, dark place for up to 6 months.
